This time of year I'll most always have one rod with cut sucker on it. I like a 7 to 10 incher cut diagonally about an inch behind the head...put on a 10/0 hook...then step on it. Fish it just like a bully...line out alarm and all. Then the second choice is the body...same method, but I cut the tail off.
Not only does this make an appealing flathead bait, but there's a chance for a good size channel cat too...along with gar, turtles and lately....sheepshead.
I pretty much think if you get that blood flowing, doesn't matter what part it is, but I do tend to use the middles first and when I run out I will use the heads and sometimes tails. They have all caught me fish.

Is cut sucker parts that go on the hook are they: the head? the body? and the tail? Is the body kept together or do you fillet it into squares and put on the hook?
The word cut bait covers a wide variety of fish baits and "styles" of cuts. The most common ones that are steaks, fillets or larger cuts like half of a legal to use fish.
It really depends on your preference.
