Ever smoke Freshwater Drum?

I am building a homemade smoker this afternoon and would like to test drive it this weekend. I can easily catch some Drum near my house (I have smoked a lot of other fish in the past...but not a Drum). I have not found much online about the matter.

Good idea? Bad?
Any feed back (before 5pm today) would be appreciated.

you would have to go to the local newspaper to get an end roll just to wrap it in and twist the ends.. plus you would need a big holder to get it stable enough to put it next to your mouth..

oh wait.. maybe you are speaking about something else...

Freshwater drum, aka sheepshead in these parts, is excellent smoked. We tried some that the guys on the G.A.F.F. smoked and decided to leave them some to smoke for us. They did fillet the fish versus smoking them whole and I think the quality is better as they seem to smoke more evenly and are so much easier to eat.

Yes it is good, we just keep the back strap and make sure there is no mud line. Fresh water drum is also awesome pickled.

Can be very good with a good recipe. We only used cold water ones in the spring. Make sure you get them cold quick after you catch them.

Sheephead are the only fish I'll eat smoked. They actually have a really nice mild flavor. I have found too, that the big ones smoke a little nicer than the smaller ones. Good luck and share any recipes!

A friend of mine made some drum jerky on the smoker a while back, very good, it quickly dissappeared. If you get some large fish make sure you get the "rocks" out of their heads. That is as close as you can get to fresh water pearls.
