Funny you mention beets...I had an urge for them about 3 this morning...but we didn't have any in the house.

There should be a can of beets in every house...it's 2009!

ISH And I suppose you love liver and onions. Just the thought of those two foods make me queeeeezie. My folks just loved them and made me eat them even though I hated them. (back in the day when parents made damn sure no food went to waste!) I'm just thankful it was only once a month that I had to choke it down and not every Friday... Glad we had a couple of dogs around the table.

NO beets or liver in this household!

We've been doing up some beets lately too, roast them in the oven, then we cut them up, add Balsamic Vinegar, and little decent olive oil and salt and pepper, and if that isn't enough I really like to add some blue cheese, specificaly St.Pete's select, Minnesota made blue cheese it's smooth and fantastic, nothing like a maytag blue cheese, certainly one of my favorite local foods. (Most places carry it around here, Cub, Byerlys, Kwolski's and even Rainbow. Of course that all goes perfect with some fresh spring greens and if you weren't allergic to them (the wife is) some nice roasted nuts, walnuts, pecans what ever you like.

I'd like to find some other varieties though seems I can only find red beets locally even at the farmer's markets.]

Oh then there's this restaurant by me that make the very best pickled beets you've ever had.... too bad they close for July (family run, family vacation time)

So we have a little bit of a beet problem in the garden. We had some room left and we had some seeds left so we planted two 12 ft rows of beets!

Here's the issue, I've never eaten a beet before! Anyone have any other suggestions on how to make them up? We will be eating them for a while.

There is absolutely NOTHING better than Maytag blue. Adding it to beets is even better...

My neighbor Lyle has the best recepie for pickled beets you ever tasted. Im not over exagerating when I say beets don't taste that good to me but,,,,, Lyles pickeled beets are one of my favorite foods, they are delecious, his garlic dills are the best and the ones in the store don't even come close.

I'm also a pretty big fan of pickled beets. My grandparents can sure make a good batch. I'll see if I can get ahold of a recipe.
