Texas Caviar

1 can black eyed peas
1 can pinto beans (with jalapenos, if possible)
1 can black beans
1 red onion, chopped
1 can chunky Rotel, drained (Rotel is chopped tomatoes and chilis)
2 med. fresh jalapenos, chopped, or 1 small can of chopped jalapenos
1/4 c. chopped cilantro
1 green bell pepper, chopped
6 tablespoons red wine vinegar
6 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon minced garlic
1 1/2 teaspoon cumin
1/2 cup sugar

Combine in a sauce pan - red wine vinegar, salt, pepper, and sugar.........bring to a boil, let stand. Drain all canned goods and mix together with all other ingredients in a large bowl. Pour the boiled sauce over and stir. Refrigerate a few hours, then serve with tostito scoops. The taste will become better/more intense as you let it marinate in the fridge.

I will ad that this stuff is really yummy. We started making it about 2 years ago and it's a great light snack and not too bad for you.

The FW doesn't like the beans, peas and just about everything else in that recipe...any chance of sending a very small sample up? CLEARLY marked for BK ONLY

My wife makes it pretty regular and it keeps me pretty regular too, lotsa fiber I guess. She zipps it up with cayene pepper, it really is good stuff.
